Our vegan, gluten-free, and sugar-free banana bread is the perfect alternative to traditional Easter bread, which is often sweetened with excessive amounts of sugar. The blend of buckwheat, almond, and coconut flour provides nutrients and flavor, allowing you to adjust the proportions to your liking. For an even less sweet option, you can replace the maple syrup with more water without compromising on flavor.

Ingredients:

  • 100 g buckwheat flour
  • 100 g almond flour
  • 90 g coconut flour
  • 2 tsp baking powder
  • 1 tsp soda
  • ½ tbsp ground cinnamon
  • ¼ tsp sea salt
  • 4 ripe bananas (400 g), mashed, plus 1 ripe banana, sliced ​​(90 g)
  • 100 ml water
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract
  • 80 g pecans (or other nuts of your choice), roughly chopped

Directions:

  1. Preheat the oven to 180°C.
  2. Put all types of flour into a bowl with baking powder, soda, cinnamon and salt.
  3. In another bowl, combine the mashed bananas, water, maple syrup, and vanilla extract. Then add this mixture to the dry ingredients and mix everything into a batter.
  4. Stir in the banana slices and nuts.
  5. Pour the batter into a 750g loaf pan lined with baking paper. Bake for 40-50 minutes, until firm to the touch. Allow to cool before slicing.
